Hotels invite guests to toast to the holiday season through festive cocktails infused with warm spices and fragrant herbs and topped with shimmering sugar.
At the Hilton Garden Inn Lake Oswego in Lake Oswego, Oregon, bartender
Corey Thomas created the "Sweater Weather Manhattan" for his winter cocktail menu.
Thomas said via an email interview the cocktail has notes of allspice that's balanced out with amaro and house-made vermouth, making it an ideal holiday beverage.
For a creamier cocktail, The Madison Hotel and Grand Bohemian Lodge Greenville played up their recipes with coconut milk.

Drink Name: Let It Snow
Key Ingredients: Blanco tequila, white cranberry juice, coconut milk, orange liqueur, freshly squeezed lime juice, cranberries for garnish, rosemary sprig for garnish, lime wedge for garnish and cinnamon sugar for the rim.
“The inspiration behind the “Let It Snow” cocktail is to predict if it will snow for the holiday season,” said Chip Shaner, bar manager at Spirit & Bower. “It’s almost like our version of Groundhog Day but instead of hoping for spring to come, we are hoping for white Christmas in Greenville [South Carolina].”

Drink Name: Sweater Weather Manhattan
Key Ingredients: Redemption rye whiskey, house-made vermouth, DeGroff amaro and Angostura bitters.
“When I got to help coordinate [bartender] Dale DeGroff’s visit to Portland to exhibit his new amaro he created with the team at Clear Creek Distillery, I knew it was something I wanted to use for my winter cocktail menu. It is a wonderful balance of bitter and spice, with notes of allspice making their presence well-known. To balance the amaro in the classic structure of a Manhattan, I decided to make a spiced red wine reduction in the style of a vermouth using local Willamette Valley Pinot Noir and ‘sweater weather’ spices in lieu of more traditional vermouth botanical builds. I reduced the wine with clove, nutmeg, anise, all spice berries, and hard cinnamon sticks before fortifying it with cognac. I found this to create a wonderful winter spiced Manhattan that is perfect to share with loved ones over the holidays,” said Corey Thomas, a bartender at the Hilton Garden Inn Lake Oswego.

Drink Name: White Christmas Mojito
Key Ingredients: Fresh mint leaves, juice of half a lime, white sugar, white rum, coconut rum, unsweetened coconut milk, sparkling water, simple syrup, sparkling sugar and pomegranate arils.

Key Ingredients: Sour apple, vodka, cream apple, lime juice, apple puree, cinnamon for the rim of the glass, rosemary and a slice of dried fruit for garnish.

Drink Name: Glass Slipper
Key Ingredients: Fresh blackberries, sparkling wine, St. Germain, lavender honey syrup, lemon juice, orchid and grapefruit shimmer for the rim of the glass.
“Like a glass slipper, this cocktail embodies elegance, enchantment and the promise of a magical night,” said Ian Falk, assistant beverage director of the Westgate Las Vegas Resort & Casino.
Yavapai Lodge, Grand Canyon Village Arizona
Drink Name: Spiced Cranberry Sangria
Key Ingredients: St. Germain elderflower liqueur, Bacardi Superior Rum, orange juice, cranberry juice, simple syrup, cinnamon, Mionetto Avantgarde Prosecco, cranberries and star anise.
“We recognize the popularity of Sangria in our region and how it has resonated with our guests. We wanted to continue to offer this option and create a unique spin on it for the fall and winter while capturing those seasonal flavors to create a unique taste profile that will enhance our guest experience to the Grand Canyon,” Director of Operations Dawn Aparicio said.
